Mediterranean Pasta Dish


This dish is so satisfying.  The colours are what make this dish a show stopper! 

I love using fusilli pasta, but feel free to use other gluten free pasta varieties.  Spaghetti also goes well too!

This dish was made with Veggie Heck sausages.  Other brands are available!

Serves 1


  • 2 tbsp extra virgin olive oil

  • 2 veggie sausages

  • 1/2 red onion

  • 1/2 courgette, cut into half moons

  • 1 Romano pepper

  • 50g gluten free pasta

  • 80g broccoli

  • 1 tbsp tomato chutney

  • 2 handfuls spinach


  1. Using 1 tbsp olive oil heat a large frying pan on a medium to high heat.

  2. Add the sausages and cook for 5-8 minutes, until golden (refer to pack instructions).

  3. Remove from the pan and dry any excess oil with kitchen roll.

  4. Put the remaining oil in the pan and add the onion, courgette and pepper.

  5. Fry for 6-8 minutes.

  6. Meanwhile put the kettle on to boil, once boiled add the water to a high heated saucepan.

  7. Once boiling, add the gluten free pasta, and cook for 6-8 minutes (refer to pack instructions).

  8. Once 4 minutes are left, add the broccoli to the saucepan.

  9. Drain the pasta, and add in the sausages, chop them into cubes if you prefer.

  10. Stir everything on a low heat and add in the tomato chutney and spinach.

  11. Stir well and serve.
