Marble Muffins

Free From All Allergens

What is better than chocolate and vanilla together? Probably nothing so that is why I have created the BEST EVER marble muffin recipe which is FREE FROM all 14 UK allergens! No one will ever miss out again.

This recipe is so versatile it can be used for birthday parties, coffee mornings, cake sales, afternoon tea or a dessert!

Makes 6 muffins (can double to make more)

Prep time: 5 minutes

Cooking time: 22 minutes

Total time: 27 minutes

Ingredients:

  • 86g caster sugar

  • 86g dairy free spread

  • 6 tbsp aquafaba 

  • 112g gluten free self-raising flour

  • 1 tsp baking powder

  • 1 tsp xanthum gum

  • 2 tsp vanilla extract

  • 1 tbsp cacao powder

  • 2 tbsp oat milk

Method:

  1. Preheat oven to 180 degrees C, 160 degrees C for fan.

  2. Line a muffin tray.

  3. Mix together the sugar and spread.

  4. Add in the tablespoons of aquafaba gradually, it may split, but not to worry, it will come together once you add in the flour.

  5. Add the flour, baking powder and xanthum gum.

  6. Mix all ingredients well.

  7. Put half the mixture into another bowl and add the vanilla to one and mix well.

  8. In the other bowl add in the cacao powder and milk.

  9. Pour the vanilla mixture into one case, add the chocolate mixture on top, and repeat with the other muffin cases.

  10. Bake for 22-25 minutes, until a toothpick comes out clean.
