Christmas Orange Muffins

Orange is such a versatile ingredient. It is festive yet great for summer months too. Keep this recipe handy as it is not just for Christmas ;)

Makes 10 muffins + 1 jar orange curd
Prep time (for orange curd): 10 minutes + overnight chilling
(for muffins): 5 minutes
Cooking time: 20-25 minutes
Ingredients (for orange curd):

30g cornflour

250ml fresh orange juice

juice from 1 lemon

120g caster sugar
-
60ml oat milk (I have not tried others)

50g vegan butter spread
Method (for orange curd):

In a medium sized saucepan put the cornflour on a low heat.

Add and whisk the orange and lemon juices.

Whisk in the sugar and milk.

Increase the temperature slightly so that the sugar dissolves and the mixture becomes thick. Do not let it boil.

Remove from the heat and stir in the butter until it fully dissolves.

Allow to cool and then put into a sterilised jar and chill in the fridge overnight.
Ingredients (for muffins):

2 1/2 tbsp aquafaba (chickpea water)

60ml vegetable oil

125g oat milk
-
125g caster sugar
-
200g gluten free self-raising flour
Method (for muffins):

Preheat oven to 180 degrees.

Line a muffin tin with muffin cases.

In a bowl whisk the aquafaba so that it becomes frothy but not overwhisked so that peaks have formed.

Add in the vegetable oil and oat milk and whisk together.

Next whisk in the sugar and fold in the flour.

Pour into the muffin cases and bake for 20-25 minutes, mine were ready after 21 minutes.

Remove from the oven and allow to cool.

Assembling:

Once cooled, using an apple corer, remove the centre of the muffin, but do not take it down all the way.

With a teaspoon insert the orange curd in the middle.

Put the lid of the muffin back on.

Repeat with the remaining muffins.
