Makes 12

Prep time: 5 minutes

Baking time: 30 minutes

Total time: 35 minutes

  • 140g dairy free spread (I would not use coconut oil, it is too heavy)

  • 190g golden caster sugar

  • 6 tbsp aquafaba (water from chickpeas)

  • 10g cacao powder

  • 70g gluten free self-raising flour

  • 100g chocolate chips

  1. Preheat oven to 180 degrees C.

  2. Line a 9x9 square baking tin with greaseproof paper or grease well with dairy free spread.

  3. In a bowl mix the dairy free spread and sugar together with an electric whisk.

  4. In a separate bowl, whisk the aquafaba with an electric whisk so that it forms soft peaks, like egg whites would.

  5. Fold in the whisked aquafaba gradually to the bowl with dairy free spread and sugar.

  6. Sift in the cacao powder and flour and fold.

  7. Pour in the chocolate chips and fold carefully.

  8. Pour the mixture into the tin and bake for 25-30 minutes, or until a skewer comes out clean.

  9. Let the brownies sit in the tin for 5 minutes and then turn out and cool on a wire rack.

  10. Cut into your brownie squares and enjoy.

  11. Merry Christmas!
