CHOCOLATE COOKIES

These cookies are completely nut free.

This recipe has been tried and tested as nut and gluten free.

It was also successfully made free from dairy and egg, making it suitable for everyone!

They are made with just the following ingredients:

  • Dark chocolate (dairy free)

  • Dairy-free spread (or butter if not allergic)

  • Golden caster sugar

  • Banana (or 1 egg if not allergic)

  • Vanilla extract

  • Gluten free flour (or plain flour if not allergic or intolerant)

  • Baking powder

  • Cornflour

Makes: 8 large of 12-16 smaller cookies

Prep time: 5 minutes

Cooking time: 14 minutes

Total time: 19 minutes

Ingredients:

  • 100g dark chocolate, broken up into pieces

  • 25g dairy free spread (or butter)

  • 75g golden caster sugar

  • 1 banana, mashed

  • 75g gluten free flour

  • 1 tsp baking powder

  • 12g cornflour

  • chocolate chips - optional

Method:

  1. Preheat oven to 180 degrees C (160 fan or gas mark 4.

  2. Line a baking tray with greaseproof paper and grease with spread.

  3. Melt the chocolate and spread together in a microwave in short increments, I recommend no longer than 40 seconds before stirring.

  4. In a separate bowl mix together the sugar and banana.

  5. When the chocolate mixture has cooled a little, add in the flour, baking powder and cornflour. 

  6. Stir well and then add in the banana and sugar mixture.

  7. Stir in the chocolate chips if you are using.

  8. Place balls on the baking tray and put in the oven for 12-14 minutes.*

  9. Remove from the oven and cool on tray before removing and enjoying!

* You can put the mixture in the fridge for 30-60 minutes before cooking.  This will make the cookies slightly thicker.  If you do, bake for slightly longer.
