Chickpea & Orange Blondies with no peanut butter
I created a mission for myself to create a chickpea blondie recipe with no peanut butter!
It was harder than I expected, but I hope you like these. Chickpeas are a great source of fibre and proteins, making them a super ingredient for something indulgent like a blondie! The orange flavouring makes these like nothing else.

Makes 9 or 18 small

Cooking time: 25 minutes
Total time: 30 minutes
Ingredients:

1 can chickpeas, drained (approx 240g)

70g pitted dates

100g honey
-
2 tbsp orange juice
-
Zest of 1/2 orange

30g gluten free flour
-
1 tsp baking powder
-
desired amount of chocolate chips
Method:

Preheat your oven to 180 degrees C or 160 degrees fan, gas mark 3.

Line a 9cm square baking tin with greaseproof paper.

In a food processor blend the chickpeas.

Add in the dates and pulse.

Whilst the food processor is blending, add in the honey and orange juice.

In a separate bowl mix the gluten free flour and zest with your fingers.

Add in the baking powder and then mix into the blender.

Pulse until it becomes a thick batter.

If it s runny, add more flour.

Pour into the baking tin and top with chocolate chips.

Bake for 20-25 minutes.

Allow to cool and then slice into squares.
